Ozpig Chicken Stir Fry

Ingredients
- 1 bowl shredded or finely sliced veggies - carrot, capsicum, snow peas, celery
- 2 tbsp olive oil
- 1 lb chicken breast (455 g), cubed
- 2 cm piece fresh ginger, finely chopped
- 2 garlic cloves, finely sliced
- Lemongrass, finely chopped
- Sweet chili sauce
- Cooked white rice or noodles, to serve
- Salt and pepper to taste
Directions
- In a medium-sized bowl, mix together the sweet chili sauce, ginger, onion, garlic. Set aside.
- Add one tablespoon of olive oil to your wok and heat over medium to high heat on your Ozpig.
- Add the chicken breasts and season with salt and pepper.
- Cook for 3 to 5 minutes or until cooked through.
- Reduce heat to medium and add half your mixed veggies and sweet chili sauce stirring occasionally, just until tender.
- Add the cooked noodles and continue to mix.
- Add the remaining mixed vegetables and serve.
