2 chicken thighs, de-boned cooked on the Ozpig Chargrill plate

1 whole garlic head, charred in the Ozpig

4 slices sourdough

4 thick slices cheese

1 lemon segmented



4 cloves charred garlic crushed

½ cup kewpie mayonnaise

1 squeeze lemon juice


Step 1 Place hole head of garlic inside the barrel of the Ozpig making sure you only have a small fire and plenty of hot coals


Step 2 Place the Chicken thighs skin side down on a hot chargrill plate over a medium fire. Flip once and cook through.


Step 3 To make the aioli combine the mayonnaise with the crushed garlic cloves and mix well to combine, season with salt and a squeeze of lemon.


Step 4 To make the sandwich take sourdough and layer with aioli, cheese, chicken thighs and top with lemon segments. Place sandwich onto the Ozpig and grill gently on both sides so that the cheese melts. Baste with butter whilst toasting.
