Ingredients: 

Dipping Sauce
1/4 cup Miso paste
2 tbsp Japanese chilli paste 1 tablespoon rice syrup (substituted with glucose)
1 tbsp sesame oil
30ml water
Sliced spring onions
Minced garlic
Toasted sesame seeds

Bulgogi (Korean BBQ Beef)

500g thinly sliced scotch fillet Enoki mushrooms
Spring onions

Marinade

6 tbsp soy sauce
3 tbsp water
2 tbsp mirin
2 tbsp castor sugar
2 tbsp honey
2 tbsp sesame oil
2 tbsp minced garlic
1 grated pear
1/2 onion, finely sliced
shallots
Black pepper
Lettuce leaves
Dipping sauce

Method:

Dipping sauce

1. Combine all dipping sauce ingredients in a bowl and mix well. Set aside.

Bulgogi

1. Finely dice onion, slice spring onions, chop garlic and finely grate pear. Finely slice more spring onion and place in water in the fridge. Trim up your enoki mushrooms.

2. Combine all marinade ingredients and marinate beef for at least an hour.

3. Start up some charcoal and fill the Ozpig's charcoal basket. Position the chargrill plate and allow to reach high heat.

4. Char grill beef for just a couple of minutes on each side, pile sliced spring onions and enoki mushrooms on top of beef and allow to cook for just a couple of minutes longer.

5. Remove beef, spring onions and enokis from the grill and serve up as lettuce wraps with dipping sauce.
