1kg skinless chicken thigh cutlets
3 cloves of garlic (crushed)
1 Tbsp ginger (crushed)
2 tsp chili powder
1 Tbsp turmeric
1 tsp Garam Masala
2 Tbsp sweet paprika
1 Tbsp salt
1 cup of natural yogurt
2 Tbsp sunflower oil
Juice of 1 lemon
1. Trim the chicken thighs, remove any bone, cartilage or skin.
2. Mix all other ingredients together then add to the chicken in a snap lock plastic bag.
3. Leave chicken to marinate for at least 2 hrs, or preferably overnight in the refrigerator.
4. Prep your Ozpig for a rotisserie setup by lighting a chimney of charcoal or heatbeads and once ashed over, add these to the charcoal basket.
5. Thread chicken thighs one at a time onto a spit rod, attach the rotisserie to the mount and begin the spin!
6. Cook time is roughly 1hr-2hrs, cook chicken to 165f (74c) internal at thickest part.
Cooking tip: you can reserve some of the marinade mixture to drizzle on the chicken as you are cooking on the rotisserie for even more flavour!
Serving suggestion: This chicken goes great as a main feature of a meal, or as an addition to a curry, koftas or any other tasty treat. It is fantastic in wraps, flatbread or naan bread, with raita and mango chutney pairing really well.
