Ozpig Australia

Ingredients: 


Choripan

South American chorizo
Baguettes
Mozzarella cheese

Chimichurri:
1 bunch of parsley (flat leaf)
4 cloves garlic (big cloves minced)
½ cup of olive oil
2 tablespoons red wine vinegar
Juice of one lemon
1 teaspoon of dried oregano
½ teaspoon of red chilies (minced)
½ teaspoon of black pepper (cracked)
1 teaspoon paprika
1 teaspoon coarse sea salt.

Method:


Chimichurri

1. Finely chop the parsley; important to note that you should never use a blender or a food processor as we want a silky, chunky consistency (this is the old school authentic chimichurri sauce done the right way).

2. Once you have chopped the parsley, mix all the chimichurri ingredients in a bowl.

3. Let the chimichurri sauce sit for at least two hours and allow all the flavours to incorporate. If necessary, you can keep it in the refrigerator for up to 24 hours

Choripan

1. Cut the baguette in half.

2. Remove the chorizo from the casings.

3. Add the cheese to your baguette and cover the baguette and cheese with the chorizo mince.

4. Get your Ozpig to medium to high heat and place the baguette facing down for 20 minutes or until golden.

5. Add chimichurri sauce and enjoy!
