Ingredients: 

2kg jap pumpkin
1 red capsicum
1 red onion
2 tbsp olive oil
1/2 can brown lentils
1 cup walnuts
2 tbsp honey Yoghurt dressing
1 small tub Greek yoghurt
1 tsp lemon zest
2 tbsp lemon juice
2 tbsp olive oil
2 tsp fresh mint & coriander

Spice mix


1 tsp ground cumin
1 tsp ground coriander
1 tsp ground paprika
1 tsp ground cardamom
1/2 tsp mixed spice 
Salt to taste

Method:

1. Bring your Ozpig up to 350fn (180c).

2. Mix spices together for spice mix

3. Dice pumpkin, removing seeds, slice capsicum into 6- removing seeds, slice onion into 8 wedges, drizzle with salt & pepper & a tsp cumin powder spice mix

4. Place pumpkin into Ozpig Oven Smoker in trays and roast 45 min till cooked through

5. Add honey to fry pan and place on Ozpig, when honey bubbles add walnuts & 1tsp spice mix, stir & remove to plate

6. Chop coriander & mint, zest lemon, Add yoghurt, lemon zest, lemon juice, salt to bowl, stir in olive oil till combined, stir in chopped mint & coriander

7. Remove veg into a large pan, top with lentils & your choice of watercress or micro herbs, mint & coriander leaves

8. Drizzle with dressing & honey walnuts
