Ingredients: 

3 single cut beef short ribs
1 brown onion, diced
1/2 bunch of celery, diced
2 carrots, diced
440g can crushed tomato
1L beef stock
Salt and Pepper

Method:

1. Bring the Oven Smoker up to 180c.

2. Coat the ribs in salt and pepper and cook in the smoker oven for 1hr at around 180c.

3. Warm up the camp oven over the stove top.

4. Add the onion, celery and carrots to the camp oven, cook with the lid on to soften all vegies for about 20 minutes.

5. Add in the tomatoes and beef stock, mix well, then add the smoked ribs, cover with the lid and cook for 2-4hrs simmering gently with the lid on.

6. The ribs are done when they are cut with a spoon tender and the liquid has reduced down to a nice thick consistency.

Cooking tip: you can use nearly any cut of beef that has good marbling and is for low and slow, but beef short ribs have amazing flavour. Leaving the bones in for the cook adds flavour and a natural thickener from the marrow!

Serving suggestion: Serve on top of a baked potato with sour cream and chives. You can easily cook a bake potato in the smoker oven while you are cooking with the camp oven on the stove top
