Spanish Chicken

- Ingredients:
Sauce (make first):

1 small onion, chopped to medium-fine

250gm crushed/diced tomatoes (can)

1 tbsp olive oil
-
1 pinch salt Chicken
Main ingredients for chicken:

50g olive oil
-
3 garlic cloves, crushed or chopped
-
1 large onion, chopped medium-fine
-
1 red capsicum, chopped medium-fine
-
1kg chicken (can be pieces, breast or thigh, anything really!)
-
50ml water
-
50ml white wine (or use water)
-
1 chicken stock cube
-
1 tsp salt
-
1/2 tsp pepper (or to taste)
-
250gm mushrooms (chopped or sliced as desired)

Assorted other vegetables if desired (broccoli, peas, beans, carrots)

nutmeg to taste

Sauce:
Saute chopped onion on the Ozpig barbecue plate or in a wok with 1tbsp olive oil,
Add 250gm crushed tomatoes, simmer for 6-8minutes, then remove and set aside
Chicken:
-
In a wok or cast iron fry pan add a little olive oil and garlic and saute for 2 minutes

Add onions, capsicum, white wine and continue to saute for 6-10min

Add chicken, water, pre-made sauce (above) and stock cube

Season with salt and pepper then cover and cook for 20 minutes

Add mushrooms and assorted other vegetables (optional) along with nutmeg.

Cover and cook for another 10 minutes, or uncover if sauce is too watery.
